Bacon Bourbon Chex Mix

This smoky, sweet, and spicy bourbon bacon Chex Mix is a bold upgrade to the classic snack mix. With crunchy cashews, crispy bacon, and a buttery brown sugar glaze spiked with bourbon and chipotle chili powder, every bite packs a punch of flavor. It’s perfect for game day, holiday gatherings, or anytime you want a crowd-pleasing snack with a little Southern flair.

Ingredients:
1 (15-ounce) bag traditional Chex Mix
1 cup cashews
½ lb bacon, cooked until crisp and crumbled
½ cup brown sugar
½ cup unsalted butter
¼ cup light corn syrup
2 tbsp bourbon
¾ tsp chipotle chili powder
Preparation:
Preheat oven to 300°F. Line two baking sheets with foil and lightly coat with cooking spray.
In a large mixing bowl, combine the Chex Mix, cashews, and crumbled bacon. Set aside.
In a saucepan over medium heat, combine the brown sugar, butter, and corn syrup. Stir occasionally until the mixture begins to bubble around the edges. Continue to cook for 5 minutes, then remove from heat.
Let the mixture cool for 2 minutes, then stir in the bourbon and chipotle chili powder.
Pour the glaze over the snack mix and toss well until evenly coated.
Spread the mixture evenly across the prepared baking sheets. Bake for 15 minutes, stirring every 5 minutes to ensure even caramelization.
Allow the mix to cool completely on the baking sheets, about 1 hour. Once cool, break into pieces and serve or store in an airtight container.
