Ingredients:
For the Tartare:
1/2 to 1 lb sushi-grade ahi tuna, cubed
1 avocado, cubed
Fried wonton chips, for serving
For the Dressing:
4 tbsp soy sauce
2 tbsp sesame oil
2 tsp rice vinegar
2 tsp sriracha (adjust to taste)
2 tsp ginger paste
2 tsp honey or mirin
2 cloves garlic, grated
2 tsp sesame seeds
Finely chopped green onions
Preparation:
Make the Dressing: In a small bowl, whisk together all dressing ingredients. Let sit for 20–30 minutes to allow the flavors to meld.
Fry the Wonton Chips: Heat 1 inch of canola oil in a pan to 350°F. Cut wonton wrappers in half diagonally for large chips or into quarters for smaller chips. Fry for 30–60 seconds, or until golden and crispy. Transfer to a paper towel-lined plate to drain.
Prepare the Tartare: In a mixing bowl, gently toss the cubed tuna with the dressing.
Plating & Garnish: Using a ring mold or round cookie cutter, place the mold on a serving plate and pack the avocado then tuna mixture inside. Carefully remove the mold to maintain its shape. Garnish with sesame seeds.
Serve: Arrange the crispy wonton chips alongside the tartare and enjoy immediately.
