If you’re craving something fresh, flavorful, and just a little bit unexpected, this creamy Curry Chicken Salad is your new go-to. The warm, aromatic curry powder blends beautifully with the tangy sour cream and mayo, while the hint of honey adds a touch of sweetness that perfectly balances the savory elements. Whether you’re serving it on toasted bread, over a bed of greens, or as part of a grazing platter, this curry chicken salad brings an exciting twist that’s still comfortingly familiar.

Ingredients:

  • 2 cups shredded chicken

  • ½ cup mayo

  • ¼ cup sour cream

  • 2 heaping tsp curry powder

  • 1 tsp lemon juice

  • 2 tsp honey or apricot jam

  • ½ tsp garlic powder

  • ¼ tsp salt

  • ¼ tsp pepper

  • ¼ cup celery

  • ¼ cup green onions

  • ¼ cup grapes

  • ¼ cup toasted slivered almonds


Preparation:

  1. In a large bowl, whisk together the mayonnaise, sour cream, curry powder, lemon juice, honey (or apricot jam), garlic powder, salt, and pepper until smooth and well combined.


  2. Add the shredded chicken, celery, green onions, grapes, and toasted almonds to the bowl. Gently fold everything together until the chicken and mix-ins are evenly coated with the creamy curry dressing.


  3. Taste and adjust seasoning if needed. Sometimes a little extra lemon juice brightens the flavors perfectly.


  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.


  5. Serve on crusty bread or toasted baguette slices for a delicious sandwich. It’s also fantastic over fresh greens for a light lunch or as part of a colorful appetizer spread with crackers and fresh veggies.
