If you love the classic bold flavors of an Italian grinder sandwich, then this Italian Grinder Chicken Salad is made just for you. Packed with tangy banana peppers, zesty red wine vinegar, and aromatic Italian seasoning, it delivers that unmistakable deli vibe in a creamy, easy-to-serve chicken salad form. Perfect on a crusty roll, baguette, or served with crackers, this salad transforms simple cooked chicken into something exciting and fresh!

Italian Grinder Chicken Salad

Ingredients:

  • 2 cups cooked chicken, shredded

  • ½ cup mayonnaise

  • ¼ cup sour cream

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • ¼ teaspoon crushed red pepper flakes (adjust to taste)

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ cup finely chopped red onion

  • ¼ cup chopped banana peppers

  • ¼ cup small cherry tomatoes, halved if needed

  • ¼ cup shredded provolone or mozzarella cheese


Preparation:

  1. In a medium bowl, whisk together mayonnaise, sour cream, red wine vinegar, Italian seasoning, garlic powder, crushed red pepper flakes, salt, and black pepper until smooth and well blended.


  2. Add the chicken, red onion, banana peppers, cherry tomatoes, and cheese to the dressing. Gently fold everything together until the ingredients are evenly coated and well combined.


  3. Taste and adjust seasoning if needed. A bit more vinegar or pepper flakes can add just the right kick.


  4. Cover and chill the salad for at least 30 minutes before serving to let the flavors meld.


  5. Serve on crusty rolls, toasted baguettes, or as a dip with your favorite crackers or crisp veggies.
